Monday Menu Plan...

Hubby is going away for 2-3 days ( he is not sure, so my menu may change) .. Here it goes for now..
Monday... Dd wants quesidillas again, I am getting sick of them, but oh well. some type of quesidilla with refried black beans, maybe some corn in them.. I don't know
Tuesday.. Pasta night.. I will be making some type of pasta with some Italian bread
Wednesday.. Fish.. Catfish with brown rice and some asparagus
Thursday.. Chicken in the Rotisserie with sides of Rice and Beans and some vegetable on the side.
Friday .. will be take out.. I have to do some shopping, and hubby gets paid , it is just a run arond day , so some type of take out, or something simple to make like Pizza.
Saturday... Maybe Grilled meat/ and pupusas, with ancho chilli fries and a fresh salad. *( this is going to depend on the weather. hubby wants to grill outside, but if it is cold this will change to just pupusas with salad and maybe platanos.

changes to menu...

See I always do this. I am making changes.. I have been sick these past few days and for 2 nights have slept horrible so tonight.. I am not making chicken , instead I am making some sweet potato fries, and refried smashed black beans and some cheese quesidillas . Tomorrow it is going to be rainy so I will be making Tortellini spinach soup with Italian bread( this is real yummy ) and I am going to make a black forest cake for V day. Cheryl

Monday Menu planning................

It is Monday and I am going to record my Menu for this week. Hubby is away at a job until Thursday and Ds is at College so it is just Dd and me; so this menu will be short and easy:).
Monday.... Tonight I am making some Veggie Quesidillas .. I have some onion and peppers chopped up I will saute this with mushrooms and maybe some shredded carrots this will go on a Pesto flour Tortilla and I will top with some shredded cheese.. I am undecided between Mozzarella or cheddar. On the side I have some great re fried black beans from Guatemala and some sour cream for a topping.
Tuesday.... Pasta night... Greek Pasta night.. I make a sauce with artichokes, garlic , tomatoes, oregano and lemon add in Feta cheese ad this to some cook pasta, serve with Italian bread and dinner is done.
Wednesday... Pizza.. Just going to take it easy .. Tomorrow hubby is back and my menu increases.
Thursday... Shrimp Jambalaya .. I have some boxes of this I just add shrimp and dinner is done.. I might serve some Sweet Potato fries on the side.
Friday... Chicken/ spanish rice and a vegetable... simple and easy. I can eat the rice and veggie
Saturday... Chipotle Black Bean soup... served with Corn Tortillas, rice and if I can get some green Bananas.. these are yummy.
Sunday... it is still to far away for me to think of Sunday's dinner. but it will probably be some type of fish.

Saturday's dinner..

It was hot here today... well not hot but 60 feels hot compared to the 20's and 30's. I took out the Rotisserie I have( I got it for free from freecycle and it works great , almost new). I made a chicken, got some fries and put cheese on top and hubby made a tomato/onion salad and that was dinner. It felt good, and was enough. Cheryl

Frugal Shopping and meal planning....

Today I am doing part of my shopping and have done my Menu for next week.. I used to be really bad about shopping I would go to Walmart spend $90+ then go to Harris Teeter for things I couldn't get at Walmart and spend another $40 and then off to Sam's club for another $100( Sam's is bi weekly) plus produce. I cut walmart all together and go only to Harris Teeter and spend about $50- $70 a week.. coupons , menu planning has helped a lot. I still go to Sam's club but there are times I spend $60 , sometimes I spend $80 or $100 it depends what I need. I buy some things that are much cheaper there than in other stores.. Here is what I need this week... Olive Oil.. I am hoping to get a bottle that cost $9... It would cost $14 anywhere else.. Toilet Tissue.. We only use Scott Toilet Tissue .. 30 rolls for $18... the cheapest it is near me is $11 for 16 rolls. So it is the same price and going to the other store would mean another shopping trip.. more gas money. I also need Parmesian cheese , eggs, water( I love bottled water) chicken( 2 whole chickens for $7..) , limes, tomatoes, mushrooms, blackberries, maybe tortellini , bananas . The cheese and T.T. will be the most expensive. Everything else is a good deal.. The Mushrooms are $3 for a big basket. The blackberries are $388 a double pint.., and I leave myself $20 incase there is something else I need. Harris Teeter is having triple coupons so I am stocking up this week on things I need. I all ready spent $39 and saved $180 there and plan to go tonight to get some weekly groceries.. and some things with triple coupons. Hubby is going away for 4 days so I don't need a lot, mostly produce, meat items, some specialty things and I am good. I might not sound as frugal as some of you but this works for me and I am getting better and better as I go along.

Friday's dinner...

Friday.. I have to do some shopping( still taking advantage of H.T. triples ) so it is simple night.. I bought some frozen pizza( spinach and goat cheese) and that will be dinner with some milk/juice or whatever. I will warm up some left over meat for hubby and he can have that with salad.. I am currently making up my Menu for the next 2 wks, but it is going to be hard.. Hubby is going away for work and I am not sure if he will be back Thursday/Friday or Saturday. When he is not here it is just Dd and I, and I can make simple vegetarian meals.. I don't have to worry that someone won't like something. I actually look forward to the simpleness of it. Cheryl

Thursday's Meal's..

For hubby I am making left over black bean soup, and left over rice with tortillas. I bought a Sirloin tip roast for $3.( it was on sale and I had a $2 coupon). For Dd and myself I am making Spinach Tortellini soup.. This is what I need:
Box of frozen spinach
basil,
Tortellini( I am using Ravioli , don't have Tortellini)
Vegetable soup base
6 garlic cloves
Olive oil
Salt, Pepper, red pepper flakes
I serve with cheese and Italian bread
This is yummy on a cold winter's day.

Monday Menu planning

Since it is not Monday I am doing this daily this week, and will begin doing a menu for the week starting Monday. Tomorrow will be another vegetarian recipe.. I hope you come back and check me out!!

Wednesday's meal...

Today I am making Chipotle Black Bean Soup with brown rice, you serve it with corn tortillas, top it with sour cream/cheese or whatever you want.
What you need for this recipe:
Dry black beans
chopped onions, 2 minced garlic cloves
1 chopped chipotle pepper
lots of water to cook beans
2 cups of brown rice
chopped cilantro
dried Oregano
Cumin powder
Salt
Chocolate ( in powder)
Orange juice( 1 tsp)
corn tortillas
Sour cream
Hopefully everyone will eat this...
